Ba'ba Cakes with date filling

 

Recipe of Mrs. Ada Yehuda. Quantities for 30 cakes.

 

Ingredients for dough: 1 kg flour

1/2 cup sugar

1 3/4 packets of unsalted margarine

2 eggs

50 gr yeast

lukewarm water, as needed for the dough (about 2 cups)

 

Ingredients for the filling:

750 gr dates with stones removed

2 sp oil

pinch of cinnamon

1 whipped egg

1/2 cup sesame seeds

 

Preparation:

 

1. Dough: Dice margarine and mix all the dough ingredients in a mixingbasin with spatula. Add yeast stirred into lukewarm water last. Kneed doughnice and soft, and leave to rise.

2. Filling: Warm dates 1 - 1 1/2 minutes in microwave, mash, add oiland cinnamon, blend into a soft mixture.

 

3. Cakes: Roll dough balls 6 cm in diameter in palms of hands. Make adepression in middle of each ball, fill with 1 sp filling, then seal. Flattenballs with rolling pin to 10 cm diamter and 1 cm thick.

 

4, Baking: Lay cakes in greased pan and prod with fork. Brush on eggand sprinkle sesame seeds. Bake in medium to hot oven until cakes are golden.
